Mopping Sauce: A Barbeque Savagery
A bold and vinegary mopping sauce for all your obligate carnivore wants and needs. A blend of many styles, this pig sauce leans East Carolina style. It's used as a "mopping" sauce to baste the meat while it is cooking and as a dipping sauce when it is served. Thin and sharp, it penetrates the meat and cuts the fats in the mouth. There is little sugar in this sauce, which produces a noticeably tarter flavor than most other barbecue sauces.
Stephen J. Stewart taught us the meaning of “Be good, brother”. He sat at the alter of barbeque and friendship, and he made us better at both. For our friend, Stew. We thank you.
